 Denna är supersmidig att äta, den är avlång och det blir inte lika mycket kladd i ansiktet som med en rund orginell. I denna varianten har jag även gjort egen mandelmassefyllning från grunden. Att baka från grunden spelar verkligen en stor roll för smakens skull. Äkta vara kan bara inte bli fel.
 
 
 
 
 
 
 
 
 
 
 
 
 
Saftiga semlebullar 13-15 st
/70 g per bulle
 
 
1,5 dl vatten
1 dl mjölk
50g jäst
100g rumsvarmt SMÖR
100g socker
2,5g salt
5g kardemumma
525g vetemjöl special
 
Gör så här: Börja med att hälla alla ingredienser förutom saltet i en assistent.
Kör degen långsamt i 6 min. Tillsätt därefter saltet och kör i ytterligare 3 minuter.
Dela degen i 70 grams bitar. Rundriv och rulla ut till ca 15 cm långa längder. Lägg på plåt med bakplåtspapper och låt jäsa på varm plats i ca en timme. Grädda i mitten av ugnen på 220 i ca 7-8 min. De ska bli lite bruna. Ta ut och låt svalna på plåten.
 
Skär tunna "lock" på semlorna och gröp ur lite ur 4 stycken semlebullar.
 
Fyllning till 4-5 semlor:
 
100 g sötmandel
100g socker
1 krm ekologiskt vaniljpulver
Ca 3 msk mjölk
"urgröpet " från semlorna
 
1 dl vispad grädde
Florsocker
 
Börja med att skålla mandlarna och ta bort skalet. Gör detta gärna dagen innan och lägg mandlarna i blöt över natten. Då blir de mer mjukare och lättarbetade. Mixa socker och mandeln i en mixer. Mixa tills det går att forma en boll som håller ihop av massan. Plasta och lägg in i kylen tills den svalnat.
 
Blanda urgröpet, vaniljpulver, mjölk och mandelmassan i en bunke. Tänk på att hälla i lite mjölk i taget för att undvika klumpar. Är massan väldigt lös från början så kanske det inte är nödvändigt med 3 msk mjölk. Är den för hård kanske det behövs 4 msk osv..
Häll massan i en spritspåse och spritsa en rand på de 4 semlorna. Spritsa därefter grädden ovanpå och lägg på locken. Pudra över florsocker och servera.
